Glenn Eagles, renowned property developer from Glenneagles Homes, has made a bold entrance into the hospitality industry with the reopening of Bouzy Bar in Armadale. With a visionary approach and a passion for exceptional dining experiences, Glenn has redefined the Melbourne restaurant scene, creating a sophisticated venue that exudes elegance and allure in every corner. 

The opportunity to open Bouzy Bar landed on Glenn's doorstep while visiting another bar in the area, and he seized the chance to bring his vision to life. Inspired by his years of living in Paris, Glenn aimed to create an ambience that would transport patrons to the charming restaurants of the French capital. 

Glenn with his extensive background in luxury property development has played a significant role in shaping the unique atmosphere at Bouzy Bar. He enlisted the help of renowned interior designer David Hicks to create a truly bespoke dining experience. 

From the moment guests step through the velvet-covered entry, they are greeted by a silk and metal-fringed cocktail bar that sets the tone for an unforgettable evening. The attention to detail is evident in every aspect of the restaurant, from the exquisite glassware sourced from London via Chez to the carefully curated playlist that Glenn has personally compiled over the last 15 years during his international trips. 

The cuisine at Bouzy Bar is a tantalising blend of French and Modern Fusion fare, offering a twist on classic dishes. Signature items include Duck Cigars, Bombe Alaska, and the famous Smashed Chocolate Pot, which will delight even the most discerning palates. 

To bring his vision to life, Glenn has assembled an impressive team of industry professionals. Head Chef Christos Milionis, formerly of St Cloud, Tipo 00, Osteria, and Young’s Wine Room, eagerly joined the project, while General Manager Dennis Ferreira, with an impressive resume that includes stints at Attica, Vue De Monde, Jacques Reymond, and Momo, was also drawn to his vision. French Pastry Chef Kiana Doraghi, previously of Omnia, rounds out the talented culinary team. 

Glenn’s passion for fine dining is anchored in his extensive experience, having visited over 35 of the top 50 Michelin-starred restaurants worldwide. This global perspective has influenced every aspect of Bouzy Bar, from the elegant design to the innovative menu.
